Kale & apple salad

INGREDIENTS FOR 4-6 PERSONS

  • 2 bunches of  fresh kale, chopped
  • 2 apples, peeled, cored and diced
  • 2 avocados, peeled and diced
  • 1 cup of cherry tomatoes
  • 1/2 red onion, chopped
  • 1/2 bunch of cilantro, chopped
  • Dressing:
  • 3 tablespoons of olive oil, or to taste
  • 2 tablespoons of apple cider vinegar, or to taste
  • 1 clove of garlic, finely chopped
  • 1 pinch of dried oregano, or to taste
  • Salt and freshly ground black pepper to taste

DIRECTIONS

Put kale, apples, avocados, tomatoes, onions and cilantro in a salad bowl.

In another bowl, mix well the olive oil with the vinegar, garlic, oregano, salt and black pepper until you have a thick uniform dressing. Pour over the salad and stir carefully.
