Romanesco is a variety of Italian green cabbage that belongs to the cruciferous family. It is a typical vegetable of the winter months that stands out for its lime green color. The appearance of this vegetable is very characteristic since the inflorescences are grouped forming conical structures. Romanesco is a source of fiber, vitamin C, pro-vitamin A, calcium, potassium, folic acid, and phosphorus. It is also known for its diuretic and anticancer properties.

It can be tasted in different ways, cooked, steamed, in creams, smoothies or even raw in salad. It is a vegetable highly recommended for weight loss diets.
