- 125 g broccoli
125 g carrots
2 small eggs
30 g Parmesan cheese, grated
1 tablespoon of olive oil
Salt and pepper
Peel and grate the carrots. In a pot of boiling water blanch the carrots approx. 3-5 minutes or until tender. Drain and set aside.
Wash and cut the broccoli into small florets. Cook in boiling water for 5 minutes. Drain and chop into large pieces.
Put the broccoli and carrots into a salad bowl. Wash, dry and chop the parsley. Add to the vegetables.
In another bowl beat the eggs. Season with salt and pepper to taste and add to the vegetable mixture. Stir well.
Preheat the oven to 150° C. Line a baking sheet with oven paper.
Heat 1 tablespoon of olive oil in a frying pan. Using a spoon, place heaps of the mixture in the pan and brown on both sides.
Place the golden patties on the baking sheet and bake for 15 minutes.
