- 1 small cauliflower
- 2 potatoes
- 200 g salted cod
- 2 slices of bread
- 1 tablespoon of chopped parsley
- 1 tablespoon of chopped basil
- 2 tablespoons of lemon juice
- 1 clove of garlic
- Extra virgin olive oil
Desalt the cod by soaking it in cold water for about 5 hours.
Cut the cauliflower into florets. Peel the potatoes and cut them into pieces of approximately 3 cm. Cook the cauliflower with the potatoes in plenty boiling salted water until tender.
Drain the cod and briefly sauté it in 1 tablespoon of olive oil. Mix it with the cauliflower and the boiled potatoes.
Fry the bread. Leave it to cool and grind in the grinder.
Mix 6 tablespoons of olive oil with the lemon juice, herbs and garlic. Dress the salad with the vinaigrette and sprinkle with the breadcrumbs.
