- 2 tablespoons of oil
- 1 small onion, chopped
- 1 clove of garlic, chopped
- 1 bunch of kale- remove stems and chop (about 4 cups)
- 1/3 cup of white wine
- 1/4 cup of cashew nut cream
- Salt and pepper to taste
Heat the oil in a large pot. Sauté the onion and garlic for a few minutes.
Add the kale and a little salt and sauté for a few minutes, until it turns a bright green colour
Add the wine and cook uncovered for approximately 5-7 minutes until the liquid is reduced and the kale is tender.
Add the cashew cream and mix well. Cook for 2-3 minutes until the cream thickens. Add more if you want it creamier. Season to taste with salt and pepper.
